Pumpkin Waffles

I think everywhere I go lately there are pumpkin waffles, donuts, pancakes…you name it. The struggle is real to stay on track this time of year!!

Have no fear! After numerous failed attempts I think I have perfected a healthy pumpkin waffle! These are pretty dense and filling and so yummy!! They actually make like 3 waffles….ha ha I am not sure how I did that.

I top mine with melted peanut or almond butter, but you can also use maple syrup and coconut oil. I made them sweet,but not too sweet so that you can sweeten them up with your topping of choice!

Ingredients

  • 1 Tbsp. Maple Syrup
  • 2 Tbsp. Honey
  • 1 tsp. of Vanilla
  • 1/4 cup oats
  • 1/4 tsp. Salt
  • 1 tbsp. Pumpkin Pie Spice
  • 2 eggs
  • 3/4 cup pumpkin puree
  • 1 tsp. Baking powder

Directions

  • Put all ingredients in blender and blend until mixed.
  • Then transfer to waffle iron and cook according to directions.

They will be soft inside. The texture will be different than a regular waffle. You can cook a bit longer, but don’t overcook on the outside.
